Summer salad

Serves 6.

As you read through the ingredients list, this salad may sound a little strange, but do yourself a favour and try it! The flavours go so well together and it is the perfect refreshing and energy boosting summer meal.

Ingredients

4 cups mixed salad leaves

1 red capsicum, sliced in very thin strips

1 cup red seedless grapes, halved

3/4 cherry tomatoes, halved

3 oranges, segmented and then each segment halved

1 large avocado, cut into small cubes

8 large eggs, hard boiled and then each egg cut into 8 pieces

1 packet of smoked salmon pastrami, cut into bite size pieces

80 mls sour cream

80 mls cream

Juice of two lemons

Cracked pepper to taste

 

Method

  1. Wash salad leaves and put aside in a large bowl.
  2. Combine capsicum, grapes, cherry tomatoes and avocado together in a seperate bowl and mix lightly.
  3. In a small bowl, combine sour cream, cream and lemon juice. Whisk together until smooth, add cracked pepper to taste. Pour dressing over salad leaves and toss to coat leaves.
  4. Add the remaining ingredients to the bowl and toss lightly to combine.
  5. Serve immediately.
