Serves 6.
As you read through the ingredients list, this salad may sound a little strange, but do yourself a favour and try it! The flavours go so well together and it is the perfect refreshing and energy boosting summer meal.
Ingredients
4 cups mixed salad leaves
1 red capsicum, sliced in very thin strips
1 cup red seedless grapes, halved
3/4 cherry tomatoes, halved
3 oranges, segmented and then each segment halved
1 large avocado, cut into small cubes
8 large eggs, hard boiled and then each egg cut into 8 pieces
1 packet of smoked salmon pastrami, cut into bite size pieces
80 mls sour cream
80 mls cream
Juice of two lemons
Cracked pepper to taste
Method
- Wash salad leaves and put aside in a large bowl.
- Combine capsicum, grapes, cherry tomatoes and avocado together in a seperate bowl and mix lightly.
- In a small bowl, combine sour cream, cream and lemon juice. Whisk together until smooth, add cracked pepper to taste. Pour dressing over salad leaves and toss to coat leaves.
- Add the remaining ingredients to the bowl and toss lightly to combine.
- Serve immediately.
