Morroccan Hummus

This yummy hummus can be used as a dip, sandwich spread, salad dressing or as a meal accompaniment. It is very nutritious and so easy to make!

Ingredients

2 cans chickpeas, drained
Juice of 1 lemon
2 tablespoons unhulled tahini
2 teaspoons crushed garlic
60mls water
100mls olive oil
2 teaspoons ground cumin
2 teaspoons turmeric
1/4 cup flat leaf parsley
Salt and pepper to season

Method

1. Place all ingredients in a food processor and process until smooth and creamy.

2. Place into an airtight container and leave overnight for the flavours to mature.

3. Hummus is very versatile and can be used for many different uses, but my favorite is as a dip with fresh carrots, red capsicum and celery!
