Crispy sauted potatoes

Crispy Sauted Potatoes

 

Serves 4.

Great warm on a cold winters night or let it cool and toss with some salad greens for a quick salad on a summers day.

Ingredients

1 kg desiree potatoes, peeled and chopped into 2cm cubes

1 tablespoon butter

1 tablespoon oil from the sun dried tomatoes

2 shallots, chopped finely

1/4 cup sun dried tomatoes, diced

1/4 cup flat leaf parsley, chopped finely

Sea salt and cracked pepper to season

 

Method

  1. Place potatoes into a bowl, add in sun dried tomato oil and shallots and toss to combine.
  2. Heat the butter in a large frying pan on medium until melted, making sure to coat the bottom of the pan.
  3. Add in potato mixture and fry, turning often for about 20 minutes or until the potatoes turn golden brown.
  4. Add tomato, parsley, salt and pepper in with the potatoes and stir to combine.
  5. Cook for 2 minutes and then serve hot.
