Serves 4.
Great warm on a cold winters night or let it cool and toss with some salad greens for a quick salad on a summers day.
Ingredients
1 kg desiree potatoes, peeled and chopped into 2cm cubes
1 tablespoon butter
1 tablespoon oil from the sun dried tomatoes
2 shallots, chopped finely
1/4 cup sun dried tomatoes, diced
1/4 cup flat leaf parsley, chopped finely
Sea salt and cracked pepper to season
Method
- Place potatoes into a bowl, add in sun dried tomato oil and shallots and toss to combine.
- Heat the butter in a large frying pan on medium until melted, making sure to coat the bottom of the pan.
- Add in potato mixture and fry, turning often for about 20 minutes or until the potatoes turn golden brown.
- Add tomato, parsley, salt and pepper in with the potatoes and stir to combine.
- Cook for 2 minutes and then serve hot.
